Last night we worked together to pull off a fantastic meal.  W grilled salmon, and I made a butter-brown-sugar-lemon-soy sauce marinade for him to put on the top… its very easy to just throw this marinade together and it makes the salmon very sweet – like candy. The kid liked it!  All I did was melt some Earth Balance (a few tablespoons) with 1/2 C or so brown sugar, then a few dashes of soy sauce, few dashes of lemon juice.  Basically the marinade should be thick enough to glop onto the salmon and not drip off.

The kid likes broccoli, so that is what we had for our side.  She helped me by munching on the little broccoli trees as I prepared this yummy recipe for “Double Broccoli Quinoa”.  Mmm. so good, this is a favorite, and I believe we have some leftovers for tonight.

Ideally, living in Alaska we’d have had fresh-caught wild salmon for our meal.  It makes such a difference.  Last night we had to go with Costco frozen “wild caught Alaskan sockeye” fillets.  The important words there are “wild- alaskan” — I won’t eat farmed salmon.  Just do a Google search for wild vs farm raised salmon for some good reasons why to go wild.
